WINEMAKING:
Fruit harvested in the cool of the morning, destemmed, crushed then pressed. The free run juice is fractioned, settled and fermented cool until dryness.

I’m thinking Thai salad here with its lime, lemongrass, green mango, ginger, and minty perfume. Well, something like that, it’s more an idea and imagery really, though maybe you’ll get the point. It offers a fine chalky grip, cool fine acidity, a little saline and savoury, tangy and energetic, with a finish of excellent length. Specific and very good.

Epic riesling. All the flavour, all the concentration, all the zip and tension. Tangy lime, some grapefruity zestiness, green mango, green almond, some light, wispy yeasty savouriness, a touch of lemon blossom and preserved lemon with a delicate riff of pickled ginger. Pristine, fine-boned, skeletal and very persistent. A fine example of the regional classic with some X-factor.
