WINEMAKING:
Hand-picked, fruit is destemmed and mildly crushed, fermentation and maceration. Shiraz (B6) and Malbec (B5) were co-fermented, 30 days on skins. Shiraz (B7) spent 24 days on skins (all in concrete tank). Maturation time 16 months in French oak
700L barrels (15% new) before bottling.
