Fruit harvested in the cool of the morning, destemmed, crushed then pressed. The free run juice is fractioned, settled and fermented cool until dryness.

I’m watching ‘Colin from Accounts’ at the moment. I like it. I also like ‘Colin from Clare’.
Smells a bit like a bunch of roses, juniper and green olive, lime and lime rind. It’s a more savoury style, slightly nutty, with a light chalky grip, green apple and citrus, a light tang to acidity, and a quinine-laced finish of good length. A bit different, but very good. Holds your interest from start to finish.
